Strawberry Matcha Mochi Waffles

These mochi waffles are inspired by one of my favorite drinks, strawberry matcha! The rice flour results in waffles with a crispy exterior and chewy, tender mochi interior. Perfect for a breakfast or a snack, topped with fresh strawberries and maple syrup.

Makes 4 waffles
Cook time: 25 minutes

What you’ll need

1/2 cup freeze dried strawberries
2 tsp matcha powder
1 cup Mochiko (sweet rice flour)
3/4 cup milk
1/4 cup avocado oil
1 tbsp baking powder
2 tbsp sugar
2 tsp vanilla extract
1/4 tsp salt
Fresh strawberries
Maple syrup

Steps

  1. In a large mixing bowl, combine rice flour, baking powder, sugar and salt. Add in milk, oil, and vanilla extract and stir until just combined—don’t overstir!

  2. Transfer half of the mochi batter from the mixing bowl into a separate smaller bowl. In one bowl, mix in the freeze dried strawberry powder, and in the other one mix in the matcha.

  3. In a waffle maker, spoon half strawberry batter and half matcha batter into the waffle press and let cook until golden and crispy (about 5 minutes each waffle for me). Repeat with remaining batter.

  4. Top with fresh strawberries, mint to garnish, and maple syrup. Enjoy!
